step 1

Soak basmati rice for 30 minutes. In a pan, heat oil and add whole spices (bay leaf, cardamom, cinnamon, cloves). Add sliced onions and sauté until golden.

Add ginger-garlic paste and chopped vegetables. Cook for 2-3 minutes. Add yogurt, biryani masala, and salt. Mix well.

Drain the rice and add it to the vegetable mixture. Add water and bring to a boil. Reduce heat, cover, and cook until rice is done.

Garnish with fried onions, mint leaves, and coriander leaves. Serve hot with raita or curry.
