Palak Paneer
Palak Paneer is a classic Indian dish made with spinach and paneer (Indian cottage cheese). To prepare it, start by blanching fresh spinach leaves in boiling water for 2-3 minutes, then immediately transfer them to ice water to retain their vibrant green color. Blend the spinach into a smooth puree. In a pan, heat oil or ghee and sauté cumin seeds, finely chopped onions, ginger, and garlic until golden. Add chopped tomatoes and cook until soft. Mix in spices like turmeric, red chili powder, and garam masala. Stir in the spinach puree and cook for a few minutes. Add cubed paneer and simmer for 5-7 minutes. Serve hot with naan or rice.
